I have two.
1. Coins engraved with The Lord's Prayer.
2. 1892/93 Columbian Expo Halves made into love tokens, counter stamped, pendants, cigar cutter, etc.

US colonials, I jump around a bit in that category though, Connecticut coppers, Nova Constellatio coppers, and French colonials lately.
I have no niche in coins--I buy type that I like. But for paper, I have a secret collection that probably couldn't be more niche if you tried.

Oh, and as of now, my niche is year sets for years that are important in physics (plasma physics in particular). Recent years (late 1800s to 1900s) are easy, but some (like 1686 for Isaac Newton) are hard, so I just get a single (foreign) coin from those years.

I collect toned coins of all types, but I’d say the early 20th century coins and Morgan toners are quite popular so the niche part would be modern clad toners:
Reverse toned American Silver Eagles.
There is something about the reverse Eagle design that captivates me.

To the extent I have one, classic US commemoratives and 19th & early 20th century US type. I'm more about breadth than niche though if you were to see all my coins together you'd quickly infer a sense of the looks I like and my budget.

Early walkers will always be my passion, but since I have completed that set, I am now interested in the latter two.
Edit to add: Morgans are also fun. I like them because they’re easy to find and very popular.

I like Washington Quarters in the current yellow-label ANACS holders, which I'll bet some of you already know.
I have a 1953 proof Washington in a soapbox but I consider that completely separate from my set. After all, I mainly bought it so I could have a soapbox in my collection!

I collect mould, spores and fungus. Sometimes coins from 1969 and 1983 as well modern silver.
Almost too many to mention.
Many. The last one was coins relating to postage stamps. Many commems had postage counterparts. 1909 Lincoln and 1932 Washington anniversaries. Kennedy assassination. 3cent stamp coinciding with 3 cent coins. End of WWI. Bought NGC-like holders to hold stamps and display alongside slabs. Research is the fun part. US type is ongoing along with foreign type that circulated here, the latter being a deep pool. When I see an area of interest (not just numismatic) I go a little nuts. Too many to list here.
I'm aware that he collected them too. We have competed on many pieces. If I remember correctly he told me he sold all of his.
I mostly collect Capped Bust Halves, preferably with cracks, clashes and other later die state characteristics, and ideally in grades in and around AU53 to AU58, with some outliers here and there. Since I show them off here, and because of the Club I belong too, I think most people here might know that.
I also have various other coin collections, as well as some currency collections that I don't talk too much about. They are also kind of niche in their scope and nature.

Being the underbidder.
While I love and collect 18th and early 19th century type, I have a particular love of Vermont coppers issued by the original Rupert mint (more so than the Machins issues), as well as Liberty Cap and Draped Bust half cents.
Two of my favorite examples….
Other passions include golf, Moto Guzzi motorcycles, and Euro motorcycles in general.
