I prefer original toning over dipped, but I would not rule out an attractive white piece out of hand. I was looking for a natural piece when I was looking to finish my Twenty Cent Piece collection, however.
I have some blast examples in my collection, most are the earlier dates in the series I collect, I mean I know I can always find a blast 43 Walker so what's the point in keeping one?
The bulk are toned.
It helps when I buy them raw!
Beautifully toned coins are my "thing" along with doubled dies. But, of course, I would take a nice doubled die with or without toning
I can appreciate both for sure. Although, for 19th century coins I tend to lean more towards the toned.
Bullseye toning with blast white in the middle gives you the best of both worlds!!
Beautifully toned? YES!! Blast white AND frosty? YES!! Blast white and dipped out? NEVER!!
Long ago, I was shown an AU50 Continental Dollar by a dealer. Since it was worn, the surfaces were a deep gray with some areas of darker toning. Well, a customer wanted it, but didn't like the toning. So, the dealer (not having closed the sale) sent the coin to NCS for "conservation." It came back with no toning or color at all, and when I saw it next, it actually looked like a dull piece of plastic.
I have and like both.
Interesting enough, I had to choose which of these two coins to keep for my seated dollar set:
I will probably be in the minority here, but I would choose the top one with "booming luster" ... if I had to choose just one.
For MS coins if the luster is great then I'll love the coin no matter what for the most part. If the luster is no good then it's probably not for me no matter what.
For circulated coins I'd much prefer original color.
No original skin, then no love from me. In almost all cases blast white is not a term of endearment
I'll take either or.
I prefer originality but I can be seduced by secondary toning or none at all if the coin is otherwise all there.

Which one did you choose?
If it had to be one I would have chosen the white coin. Original frost and luster on a coin like that is mesmerizing. I have not seen many like it.

A little more info - the white coin is ex Eliasberg and was dipped after the sale. It's a solid to high end 64. The colored coin is ex Jack Lee. It's also a solid to high end 64. With both coins in hand I truly couldn't choose the better of the two - so I kept the attractively toned coin over the dipped white coin.
@tradedollarnut: What did the coin look like before it was dipped? I would not be able to tell that the coin was dipped. Would you have known it was dipped if you did not have prior knowledge?
You can see some dip residue. Iirc, it was dusky grey gold in hand.

My preference is original, untarnished......That being said, I am not a fan of dipped coins - especially over dipped.... I will reject a coin if I can determine it has clearly been dipped. There are coins that age gracefully... with little to no tarnish. It all depends on care and storage. I do have some coins that exhibit tarnish...those are mainly coins that I obtained slabbed, such as Buffalo nickels with their typical 'gold' ageing tarnish... I have a couple of my Father's German coins - silver - that are merely grey... no significant tarnish, and they have been in the family for 80 + years... The bottom line is, collect what you like and enjoy the coin. It is, after all, a hobby.
