That is a good question. If I see Joe again I'll try to find out. My assumption has been that the gingerbread houses are baked fresh each year and that the set pieces are reused. (Note Joe is the Pastry Chef for the hotel.)
OK, I did get a chance to see Joe again today. I was able to confirm that the gingerbread houses are baked fresh each year.
Interestingly I learned of a family tradition that started with Joe's kids and now is being carried on by the grandchildren. When the holiday season is over the children come down to the hotel and are allowed to play Godzilla as they smash the village.
As a bonus, I was gifted a bag of edible gingerbread house pieces to take home! Here is my treat:
And some added views of the Charles Dickenson inspired gingerbread village from today's visit. (I see my own reflection got caught in the window - or is that the Ghost of Christmases Past, Present, or Future?
Yummy, just tried the pieces of the gingerbread house courtesy of Joe, the Pastry Chef. They are chocolate covered with almond slices having been added to the dough.
Thanks for the information... wow.. a lot of work - and delicious looking I like gingerbread, not so much chocolate, but those pieces do look good... Cheers, RickO

Retired dealer and avid collector of U.S. type coins, 19th century presidential campaign medalets and selected medals. In recent years I have been working on a set of British coins - at least one coin from each king or queen who issued pieces that are collectible. I am also collecting at least one coin for each Roman emperor from Julius Caesar to ... ?
I decided to add "Fred's House" to the Christmas Carol. It's actually the "student home for the holidays" which was retired this year, but it looks more like Fred's house than the offical model.
I also added "Cousin Eddie’s gift to Clark” from “Christmas Vacation.”
The Elvis House, Graceland, doubles has the rich boss's mansion in this overview.

This would be a great addition to a Christmas village if it is ever made available. As pictured it is in Philadelphia, but I assume it was borrowed architecture from structures that existed in Dickens's England.

Each time I return to the Holiday Gingerbread village I discover something I missed. Hiding in plain sight was this period carousel.
