If you had to choose ONE coin from your collection, which would define you? If someone was to post a coin, that it would be recognizable as "Mephistopheles' " coin, which one would say would characterize you as a collector?

Good question....but I don't think I have a good answer.
I'd define my collection overall as more of a "Collector Grade History of US Coinage", so a single coin can't really cover it. No single coin is impressive enough to stand alone without its predecessor and follower in time....

Here's a warning parable for coin collectors...
I've named my collection the "Colosseo Collection" so it feels appropriate to say that my sestertius depicting the Colosseum at its inauguration is my most identity-defining coin.
Being new at coin collecting I don't have much so I don't know if it defines me, but this is my favorite so far.
Some really nice coins so far, old and new.

My favorite coin is my 1913 Prussian Drei Mark piece minted in Berlin that Einstein used to purchase a red rose. It's the crown jewel of my otherwise modest collection.

I'm going to have to post two. If you are talking strictly numismatics, my avatar would be the one that defines me, e.g. born in 1958, love Franklins and love top notch toners of any Type.
OTOH, my board name is Skyman for a reason, given my professional field and my love of space. This one allows me to conjoin my love of numismatics and space. It also is neat in that one of the thoughts that I think a lot of coin collectors have is, "If only this coin could talk... where has it been and who has handled it?" This $2.50 Liberty flew on Gemini 4. To the best of my current knowledge, this is the first spaceflight that an astronaut brought gold coins on. During that flight Edward White II (later killed in the Apollo 1 fire) took the first US spacewalk (the 2nd spacewalk in history). The pictures of that spacewalk are still some of the coolest out there of all spacewalks in history.
