1000 grains should be a little over 2 troy oz.
I think only 4000 were made in 1973 but I am pretty sure I've got that wrong. It seems older. Mine came in this bag inside of a grey-white box.
Sterling is .925 fine so 1000 gr sterling bar would contain 925 gr of silver and 75 gr of alloy. There is 480 grains in a Troy ounce. Divide 925 by 480 and you get 1.927 ounces of silver.
