Do two $2.5 gold coins have slightly more premium than one $5 gold coin?
for 2 common date, common grade coins against a common date common grade 5, the 2 will carry a slight premium over the 1
It would depend on the grades of the individual coins as to whether or not the OP got a fair trade,

I recently bought this one for roughly $100 over melt. It's in an MS-63 holder, but I think it's a point higher. It does not matter because the extra point would not add much to the value.
Here's my favorite $5 gold coin, a 1795 from the first year that the coin was issued.

Bought this Carson City at auction raw in 1989, and this Indian late last year.

If I had any $5 gold I would trade them for two $2.50's.
