Above, and here below, vintage snow machines that were made available for filming in the movie "Big Miracle. A past owner of a local company that once sold snow machines had retained a personal collection.

The reciepe compliments of Viking Cruises where it is called "Chairman's Choice: Poached Salmon & Cucumber Salad."
We first tasted this succulent way to enjoy salmon on a Viking Cruise from Moscow to St. Petersburgh and it remains a favorite. The Chive Sauce is a key feature that makes this dish a winner.
Viking claims this is a dish that Norwegians have loved for generations.
POACHED SALMON & CUCUMBER SALAD
Ingredients
POACHED SALMON
4 salmon filets totalling 6 oz
PICKLED CUCUMBER
1 cucumber
Salt
2 Tablespoons sugar
3 1/2 oz water
8 1/ oz rice wine
Vinegar
CHIVE SAUCE
1 pint heavy cream
2 3/4 oz butter
Salt and pepper
1 Tablespoon fresh chives
DIRECTIONS
Bring a pan of salted water to a boil, then turn down the heat and add the salmon filets. Allow to poach for about 8 minutes until just tender.
Meanwhile prepare the Chive Sauce. Bring the cream to a boil in a saucepan, then reduce the heat and allow to simmer until reduced by half. Whisk in the butter, then add the fresh chives and season with salt and pepper to taste.
For the pickled cucumber side dish (which should be. prepared first as it will need to be placed in the refrigerator to cool for half an hour before serving) peel the cucumber and slice into disks. Sprinkle the disks with salt and allow to marinate for 5 minutes. Squeeze out the liquid. Mix the sugar, water, and vinegar, pour over the sliced cucumber, and place in the refrigerator for half an hour. Drain and serve.
OPTIONAL PAN FRIED POTATOES
Use red potatoes or other small potatoes. Boil them in water until just slightly soft or otherwise just slightly soften them by use of the microwave. Slice the potatoes and pan fry them in butter seasoned with fresh lemon juice, salt and pepper.

Eighty Years Ago this week the first and last atomic bomb used in war detonated. The first was in Hiroshima and the last, three days later, in Nagasaki.
Lest we forget .....
Earlier this year we visited both cities and their respective memorials and museums relating to the bombings. Below in this initial post are videos and photos from Hiroshima.
The first video documents this years efforts by a Rotary Club in Japan to refurbish the under water plaques at a memorial in Hiroshima.

Nagasaki reminds that it is the last place that experienced an atomic bomb in war. Its message to the world is a hope that it will continue to remain the last place.
