There is a restaurant that got its start at the 1982 World's Fair in Knoxville, TN. It served a small bag of Fritos with chili poured on the chips with shredded cheese. For eateries at the fair it had some of the longest lines. In the 43 years since this successful start it has franchised several brick and mortar locations. We eat at the one in Johnson City quite often. Not sure when the Texas pie got its start.
I never heard of pasteurizing eggs. Wouldn't that be the same as hard boiling them?
