There are several reasons to have them listed. We have 2 instances on our website that we leave coins up on the site with an indication they are sold. The first is all of our coins in our "HJB Select" category. Many of these coins get snapped up very quickly so we want to make sure that people who visit our site have the opportunity to see the best material that comes through. It could motivate people to provide want lists and the like. The second is when we have a personal catalog. When we have personal catalog that highlights a set or collection of a collector we are selling on their behalf we keep sold items listed so people can see the entirety of the collection. It is especially pertinent when it is part of a whole set that is being sold off.
I can see the point of having "special" coins stay up on site, but 31 of 38 is probably carrying it a bit far.
I usually leave coins up on the main page with the sold tag until I am sure that the person has received the coin, and is happy with their purchase. I then have an archive page that I move the sold coins to. The archive page isn't displayed on the main site because it gets too cluttered and keeping it in some order has gotten difficult, but if someone uses the search bar on my main page, the sold coins will also show up in the search.

The "sold" stuff gets on my nerves too. You see something that has been on your want list for a long time, and it's like the dealer is teasing you. The least they could do would be to leave the price on it so that you would get SOME information for your time.
I suppose that "on hold" is okay because there is an outside chance that the coin will not sell, but that's disappointing to see too. It's better just the pull the listing. If a dealer wants to brag about what they have sold, they should have an "archives" section.

I know the exact dealer that you are referring to. If your a dealer and don't upkeep your site for weeks or even a month at a time I won't waste my time going to it. Just food for thought.
