I can't think of a better one word name for a new collector, but it does carry a "I am new to this and have no idea what I'm doing" connotation.
If I had to pick one word to describe adults new to the hobby, it would be "newcomer".

The reason I ask is we just hired someone that is in their 30's and new to coins to help out with the online stuff....
