There are people who probably know a more 'correct' answer but I consider it to be the year that has the Triple Crown stats on it. For Mickey, the 1957 Topps is the Triple Crown card, to me, because it is the first card to come out after he accomplished the feat and featured the 1956 line of .353,/52/130 and actually talks about his offensive sweep yet makes no mention of a 'triple crown' by name...
So for Yaz, I would say the 1968 card. Again, just offering my personal opinion.

Not sure why your tone here is so impatient, as you only posted this today and many people are working and not checking the boards. If you wait a day or two, you'll get more answers.
That being said, now that I am just seeing this OP for the first time at this moment, yes, I agree the 1968 card reflects the 1967 season and is therefore my first choice to represent the feat.
I'm clearly in the minority so far because I've always identified the '67 as his TC card. This is an impression I've held from my youth, and it would take a lot to move it to the '68 card. I see why folks would identify the '68 as the TC card because of the stats, though.
I vote 1968, and it shouldn't even be up for debate, in my opinion. The cards that actually depict what happened are the cards that you should collect. If you were a Tigers fan, you wouldn't collect the 1968 Topps World Series highlights set, you'd collect the 1969 subset that actually depicts their 1968 win.
I believe the 1975 Topps MVP subset is a big reason that this is even a point of discussion, as they use that year's release to depict the winners. Despite everything else I love about the 75s, that has always gnawed at me.
The title of the thread is Triple Crown. I clicked on it to see what it was about. Actually figured it may be somewhat speculating about Judge this year. While I was one of the 44, I would have no idea on the answer to your question.

Similar to what you point out with the 1975 Topps MVP cards, another bunch of culprits are the 1980's Topps Turn Back The Clock card subsets. Most relevant to the OP here is the 1987 Topps TBTC Yaz, talking triple crown on the back text but picturing the '67 card.
I would consider Topps 1956 or 1957 Mantle cards, or 1967 or 1968 Yaz cards to just be regular cards. I would only consider something to be a 'triple crown card' if it is specifically for that, for example this 1991 Score Mantle:
ETA: 71T Greatest Moments is likely the earliest to mention the Triple Crown, 77T Turn Back the Clock, 93 Score Select or there's a Sportscaster also dedicated to the Triple Crown.
Well I don’t know if we are Malta, The Treaty of Versailles or ultimately the Spanish Inquisition. “Will you Convert, what a show” however my two cents is I have always thought Mantle’s “Triple Crown card” is the 56 before he did it. Let’s call it the triple crown year of rookie card.
Red Sox fans care a lot more about the 67 Topps set. Maybe it’s just me, however 68 is kind of an after thought. For many reasons as well I have always considered Yaz’s triple crown card the 67.
260 bystanders and only 20 comments has to lead me to believe that the majority does not know or care . I dont think im going to get a concensus of 10 people.

Since it seems important to get a lot of opinions I will put in my 2 cents worth. It really doesn't matter much to me but if I had to choose I would go 67.

While I understand your point, I have seen new members come on here before and think that since they had 68 views, they don't understand why they only have one or two comments. They think they should have 68 comments. Just my 2 cents.
I'm glad you got enough votes to get your consensus, but I believe it to be the 1968 as it has the stats on it for the Triple Crown. The 1967 is much more popular with people so if they were made to choose most would probably got with that.
I'd venture to guess that the 1967 Series 4 cards were off the shelves by mid July, and you'd be hard pressed to find any baseball cards at all by mid September 1967. I'd also venture to guess not one person opening a pack of 1967 cards, back in 1967, upon pulling a Yastrzemski said to his friends, "Hey, cool! You know I just snagged a Triple Crown winner out of this pack!"
But I bet they knew who led the American League in all 3 categories at the end of the 1967 season when they pulled a Yastrzemski in 1968. If they didn't, they could read the text right on the back of the card, telling them it was so.
I will say, there's no wrong way to collect. I say, buy every card of every Triple Crown winner, no matter what the year, and you won't go wrong.
-While I see why you'd ask the question, I am a firm believer in collect what you want to collect.
-I would prefer the year of the card it happened: so 1967.

The trio of 68 Leaders cards.
Why do consider this his official triple crown card?
They show him in first for each leg of the crown.
ETA: What better way to show the triple crown than three cards featuring three players each? The triple-triple-triple if you will.

Agreed. This is why I like the trio of 67 Leaders cards that depict Koufax's triple crown from the previous year.

I'm going with 1967 for Yaz. That was the year he achieved the feat.

Foward pass won the first 2 legs of the triple crown in 1968 only to be beaten by Stage door Johnny in the Belmont, so I will go with 1967.
He won't win the triple crown with a .240 average

Otherwise, we could call next year’s cards of Ohtani his rookie card since his rookie stats are listed.

He didn't win the triple crown, Killebrew had as many home runs in less at bats in 1967. ;-)
1967
While I agree with you, back in the day, rookie cards did come out the following year of their debut.
