The Proofs or Business Strikes?
I know that the Proofs in any series are more expensive, but which are more popular and sought after? Proofs or Business. also, which fall more in the error/variety category? One comes to mind being sought after (Proof) the 1895 "proof" Morgan Dollar.$$$$ -joey

That is not always true.

I used to love high grade proofs because they are nearly perfect representations of the coin. But over the years, I've grown a lot more interested in business strikes simply because they were made to be used; mid-grade business strikes are nice enough that the design detail can be appreciated but they are still a tangible connection to history because they were used in day to day commerce during the era in which they were minted.
This is what was 'saved' by collectors back then. You actually need to be careful when buying raw tough date seated coins,
shield nickels, liberty nickels, among others, as dealers will try to pass circ Proofs as biz strike coins (knowingly or unknowingly).
As far as popular and sought after, the Indian Cent Proofs pretty much jumped across the board, by dates and grade, in the latest Greysheet (not that you can buy them at those prices anyhow

I would change it to you need to be careful even when buying TPG 19th cen non-branch mint coins and extra careful when buying raw. I can't count the number of questionable (or positive) coins as (proofs in BS holders or BS in Proof holders ) in all the major holders.

This is not true for a number of 19th century coinage issues. For example when I was dealer I had a customer who was working on a Mint State Indian cent set. He bought the 1877 in Proof because it was a good deal cheaper than the Mint State coin. And some of the Proofs in the 1870s were casually made, so the coin did not really look out of place in his set.
As for my own preference, I prefer the Proof coins when they available as a type collector because those pieces often provide the best rendition of the coin's artwork. Many collectors do not agree with that opinion. They view Proofs as "medals" that were not made for commerce and therefore are not as desirable.

I think the business strike 1895 $1 is more highly sought than the proof. Just hasn't been found yet

On what you posted, I checked the PCGS price guide. Concerning the 1895o, as high priced as the 1895 Proof is. In a 67 grade, the 1895o (business strike) BLOWS the 1895PROOF out of the water!!! Wow! I just noticed that. Ex: 1895 Proof 67 grade;$160,000 / 1895o MS67 grade; $575,000! Here is an example of Business Strike wins over the Proof.
