I always liked the Allen Iverson interview.
Another good one to mention is the post game press conference with Pat Knight. Not sure if I like it though as I feel he was very hard on his team in public, but worth mentioning.

What I would like to see again is the one from the 1997 World Series (pre-series conference?) where Jim Leyland is PISSED at the media for implying that the wild-card Marlins don't deserve to be in the World Series (yet the Broncos won the Super Bowl that same season as a wild card and no one said one little peep).

A close second is the one where Bobby Knight makes all those funny faces because he apparently doesn't understand what it means to have a "game face"

And third place would have to go Benerick when he was coaching the Celtics where he said "Larry Bird's not walking through that door fans..."
