Asside from a few dead-ball era guys in the 1800s, there are two recent 300+ game winners who never saw the Series...
Phil Niekro = 318 wins
Gaylord Perry = 314 wins

If we count Torre as having an appearance in the World Series, Victor Martinez may be close to the best choice for catcher. Griffey has to be the centerfielder and Sosa the rightfielder
Is Thomas a firstbaseman or a DH? More games at DH, but his best years were at firstbase. Either case Carew or Edgar Martinez are the easy choice for the position Thomas does not occupy
No secondbaseman is close to Sandberg; Billy Williams is definitely better than Kiner for leftfield
