Roger Clemens was in COBB. I think he played one of the pitchers that Tommy Lee Jones batted against.
From my youth, I remember seeing Fred Lynn (my fav player back then), George Brett, and one other batter I can't remember appear in an episode of Fantasy Island. Brett got K'd by the dorky Gary Burghoff character who was pitching to him and exploded into a rant against the ump. This was a pre-cursor to his famous "pine-tar" tirade
Although not as low key as the above, I thought Dan Marino was actually pretty good in Ace Venture: Pet Detective.

I'm amazed no one has mentioned Dick Butkus and Bubba Smith in the TV version of Blue Thunder. Not exactly cameos - they were recurring roles in the weekly show - but certainly obscure enough. The show lasted only 11 episodes.
