eBay coin sellers have you had a panicked customer contact when they chose wrong payment option?

Has a buyer contacted you in a panic when they accidentally chose the wrong payment method?
I have encountered it a few times. The most recent buyer is happy with the delivered coins but wants to dispute the charges so they can pay a different way.
Communication has been difficult and vague.
Anyone experienced a wrong payment scenario?

It's a scam! He wants to file a dispute with his credit card company, so he gets the coin for free. How would you ever get paid for the items?
This was my first immediate concern. After investigating customer with problem I found a good account with 100% feedback and several years old, a decent amount of previous sales and purchases.
I have mistakenly picked the wrong payment method it just lived and learned from the choice. I am still a little suspicious of this newest issue.
When dealing with this previously, the customer made immediate contact after purchase about wrong method. I canceled and they bought it again, no worries.
This new customer already has the coins…
I did offer to
make a new listing so they could pay the proper way, then I would refund the previous transaction…
but they declined this offer

They need to solve this with eBay customer service. You can’t change their payment method for them.
Alternatively you could agree to a return of the coin.
How expensive is the coin and can you afford to take a total loss on it?
Document everything - hope for the best (99%+ of buyers are good people) but prepare for the worst (scam attempt).
Since they declined the option you gave them, the only other acceptable way would be to have them return the item and then get a refund. But they might not like that either.
Is it a significant enough dollar amount in your opinion? If not, you might consider refunding first and risking not getting paid or fighting a potential chargeback (worst case you lose the money and get a chargeback fee but you might also win if there is enough communication and eBay properly reviews it).
$100 for two coins.

That’s at the point where it’s not life changing but it’s big enough to have to eat the loss. I’d see if they would agree to return or reconsider paying again first-if it’s on a credit card, the money wouldn’t be due right away anyways. If they agree to the second payment, you would still need to make sure there is some sort of tracking number (maybe you can reuse the first one) so that they can’t claim they never got the item and have that amount disputed too.
Does eBay seller protection still cover sellers for buyer shenanigans? Or would eBay take money back from me if a customer did a charge back.

It's not automatic. I've been through it. The problem is that eBay will get out of the way if a charge back. And the credit card company will not enforce a return of merchandise. You have to document everything and get as much on record through the eBay messaging system. And try to get him to do everything through eBay not his card company.
For $100, it sounds like a scam. The charge went through. Why would he need to change payment methods?
100% scam. Either they return the coins for a refund or re-purchase the coins under a new listing and you refund the other, or warn them that ebay will not look fondly on a charge back considering he literally told you he wanted to do so. That is deceit and he's not even hiding it.
