Bellows allow a wide range of magnifications with a correctly matched lens. They also offer a way to mount the lens in a permanent way, on a tripod or copy stand, allowing you to remove the camera for other uses. Some of the longer macro lenses also have tripod mounts, but none of the shorter ones do. I use a bellows setup for all my coin photography, and they allow me to go from dollar size or larger view to macro view (small features on that dollar). They are not good for carrying around since they are relatively delicate, though some are small enough to do that if you wish.
