Whenever I shoot coins without luster straight-on they turn out a bit darker than they really are.

In other words, lengthen the shutter time by 2x -- so if you're shooting at 1/10 of a second at f8, try 1/5th of a second at f8. Then dial back from there (i.e. you might try 1/8th of a second too).
