    While that may be all that it is, there is also a good possibility that someone has been doing some false color composites, plugging images created by sensors sensitive to different wavelengths into different color "guns" (e.g. the red, green and blue color guns of your screen). It is a very common technique to pull out different information from an image. Basically all satellite data uses this technique. If you have ever seen a picture of the earth in a "National Geographic" or something of that sort where the earth appears red or pink and the water appears black you have seen a false color composite of a near infrared (NIR) wavelength with a visible wavelength. The NIR is plugged into the red gun. Healthy plants will reflect strongly in NIR, so that healthy plants will show up as red and any unhealthy plants will show up as pink or potentially even softer colors. Water does not reflect in NIR hence it shows up as black. As you might guess this technique is used to find areas where the plants are "stressed"... let's say by gypsy moths or something of the sort.

    In the picture of the Moon case, for all I know the wavelengths might have been combined in a way that would show up certain minerals.

    EDITED TO ADD: In response to Mumu, given how expensive and time constrained Hubble astronomy is, I would be very surprised if they used it on as nearby an item as the Moon. Mars yes, Pluto yes, the Moon, no.
