AT, NT? all white seated coins have been messed

There is virtually no chance a coin that is 100+ years old managed to stay pure white on it's own.

Reason I went there is because I have seen GSA toned dollars that commanded huge premiums as well. If they aren't "safe", I would like to know rather than assuming the world is all rosy and at peace with each other.

It is how many times they have been dipped.
The 1872-S quarter in the Richmond sale is a great example - a pure white blazer coin with killer luster, and looked totally unmessed with, like it was minted yesterday. Dipped? Probably, but I bet only once or twice.
I remember reading in the Richmond catalogue about this dipped
72-s being finer than the Norweb coin by a lot. I think they said the Norweb coin was something like a MS62. Nothing could be further from the truth. It was a solid gem coin by 1987/8 standards and was borderline superb. Someone was smoking something or never saw the Norweb coin.
A number of original hoards of seated dimes, quarters, even halves from the 1879-1890 period were known to be orig white upon hitting the market. These are rare exceptions. I've owned a couple of near white orig seated coins, but 80% white is about as close as you can get. I too prefer a touch of color.
All white seated coins are not necessarily messed with. But the odds are strongly in your favor that they are.
