I have a shallow but otherwise large box that I want to store some slabs in
Think I've read here that they are fine for that.

The ones I buy from Costco (pack of 3 boxes = 180 bags):
The ones I am using have no PVC.
Box states:
60 freezer zip lock bags
Ingredients: Polyethylene, dye and ink

Can we see the box you're talking about?
I'd be careful about stating that. I've had plenty of collections offered to me with raw coins wrapped in plastic wrap, oozing green PVC.
Who knows what brand of wrap it may have been, but it likely came right from the kitchen drawer.
Buy the SC Johnson as I mentioned above and you will be OK.

Or some coins already had PVC and it got worse over time. Just buy the SC Johnson it has no PVC.

It's not a box but I've used these Ziploc bags with dry packs.
I never used it but I considered vacuum sealing..........without the meat! 🥩 😉
“Welcome to the party, pal”. Sealed several of these 2000 Sacagawea key rings in the year, yep, 2000. Recently opened a few of them. There is a faint dark mark on the rim, but faint. Sealing plastic damage? Coin appears mint. Not the greatest pics, you decide. The leather on the ring appears brand new and fresh. No dryness or cracking. Why did I do it? Because I could.

Done. Obviously, no coin exposed. Leather still looks good and I can see nothing that stuck to the reverse of the holder itself.

I'm sure that plenty of food storage products are safe for coin storage ... and some are probably not.
My objection is to the blanket statement "food safe means coin safe." I simply wouldn't make that broad assumption. Instead, I'd evaluate each product on its own merits, or lack thereof.
