78 Rack. I love the 1975 OPC but the OPC gum deterioration will have destroyed too much of the potential.

78 Topps rack will give you the better chance for PSA 9+ cards versus the 75 OPC. Plus the 75 OPC is more rare, so keep it sealed. 93 SP is not very exciting outside the Jeter, which is about 1 per box. Net, I vote 78 rack to give you the best chance at RIP value.
Racks are Too Pretty to bust open...I'd hold on to the 75 as well...
All 3 are good choices but please rip the 93 SP Pack PSA 9. It's much rarer to see ripped than the 70's Topps Baseball stuff.

I would say rip the 78 rack. The 75 OPC is tempting with the chance of Brett, Yount, Ryan, Aaron, Rose, and other stars, but only 8 chances of pulling one of the 660 cards in the set. Did OPC fix the issue of the leaking gum by the time the 75s hit the market? I thought that the leaking gum only plagued the 1972 packs.

Personally the 93 pack would go first. Cards are probably stuck like glue. The 78 at the same time. No use keeping sealed unless doing a run of packs.
I'd rather NEVER rip the OPC. Especially if in a PSA holder. No benefits. Keep sealed.
78 rack has the best chance for higher grade pulls and positive results with 2 major HOF rookies. 75 OPC, I can tell you from experience, is typically a brutal experience with centering (worse even than 75 minis) so the odds of turning $450 into $4.50 are very high. That said, if you are lucky enough to get a centered pack, the upside is huge with the key cards from that set.
So, if you want to play it safer, go with the 78~Murray and Molitor are both 1K+ cards in PSA 9 grade and you have much better odds pulling centered sharp cards from a rack pack than you do from a 75 OPC wax pack which contains 2 fewer cards than the Topps counterpart and usually at least 1 of the 8 damaged by the gum.
Additionally, the value of a 78 rack pack is less than 1/2 the value of a PSA 9 1975 OPC wax pack.

Gum damage is not nearly as bad with 75 OPC as it is with 72 (really, 72 is the worst by a country mile), but the gum is usually stuck to the top card which ruins 12.5% of the pack contents right off the bat.
