    Ok gentlemen, it's the final week of the contest, everyone else is too far back, but @2dueces and @Brick are neck and neck, so @Brick, if you want to take a shot at it, here we go.

    I’m not sure on which one to pick…

    3# ground beef
    3 TblSps curing salt
    1Tea liquid smoke
    1 Tea mustard seed
    1 Tea crushed black pepper
    1 Tea garlic powder

    mix well and back in the refrigerator, then put a note on the ‘frige as a reminder for you: “don’t forget to beat the meat for the next 3 days” after the 3rd or 4th day of beating the meat; shape into 3 decent size logs.

    Preheat your oven to 170, spray an artsy-fartsy throw away aluminum broiler pan with cooking spray and bake for 4 hours. Increase your oven temp to 200 and bake for another 2 hours…Let cool & refrigerate…

    Then I became a little more creative and decided to use 2# of ground deer & 1# of ground pork as with:
    3 TblSps curing salt
    1 ¼ Tea liquid smoke
    1 ¼ Tea mustard seed
    1 ¼ Tea crushed black pepper
    1 ¼ Tea garlic powder
    ¼ Tea crushed red pepper

    As shown above…

    My next venture on this I’m thinking about adding just a touch more on the crushed red pepper, chile powder, maybe a fresh jalapeno or two… :)
