What appeals to me about the earlier milled 8 reales is that they were struck by individually set dies by human operated screw press so no two are exactly alike in part due to the absence of a collar to help center the planchet. Starting in the late 1800's most Mexican mints started using modern mint technology, hubbed dies, steam driven presses so they start looking like Morgan Dollars in terms of individuality.
Pesos fall into this category of sameness of strike and thus less interesting IMO.

In high grade, yes, they are.
Keep in mind that the three one peso series, one gold and two silver, are long and difficult projects that are likely in the decades. These are not like Morgans that if you have enough money you can complete.

Money and rarity.
Don't know if you are also thinking on the Un Peso Resplandor, a complete album can be between $600-700USD maybe more and yes depening on the coins conditions, plus all the time spending in finding each coin (the fun part):
The Un Peso Porfiriano or called 'Fuerte' it is the same design as the 8R, I had found pieces at 50 and the most I have paid was 80 bucks.

One interesting area to be careful of is the restruck Mo-AM 1 peso coins. You might think wow this is in great shape and pay too much for one.
Maybe someone can chip in with a good link explaining the story behind the restrikes?

its a fascinating story , the coins were struck at the san francisco mint and sent to China to pay the troops ? on the losing side in the civil war and then many were carried away by them when they bolted

the 1871 coin you posted is the one you meant? Thats a balance scale on the obverse , I'm pretty sure they only restruck cap and rays type from 1898ish to 1903? Someone can confirm that

They seem pretty easy to recognized based on the placement of the ''O'' in MO.

don't do that , just watch for the O above the M and don't overpay for a restrike .
All the pesos and 8 reales are a good thing to own

i have bought in the past many restrike coins, mostly gold, for example Hidalgos or Centenarios.
btw, the Resplandor Pesos, these you can find in a very nice conditions, and can be a nice addition to your collection too.
