I haven't been in a long time (13 years?), but there are two I used to frequent. I grew up at Horizon Rare Coins in Summit (small shop, so generally a small inventory), and Stone House Coin Shop in Scotch Plains treated me well and had a good size operation for someone looking to buy.
Depending on what's needed, the monthly Parsippany show is one of the best/largest regular local shows you'll find anywhere.

I stopped by Green Brook Coins in a srtip mall on 22 last week for the first time.
Proprietor Mike was a pleasant, nice and welcoming man. Bought a few rattlers at fair retail. Will return.
Most of the B&M in Jersey are either glorified cash-4-gold shops or emporiums of dipped coins in 2x2's, whos proprietors know better than the TGPs.
