How do you guys mail high $ cards to PSA?

do you insure them? fed ex overnight? USPS Restricted? What's the safest move in your opinions?

The safest would probably be USPS Registered. It's also the slowest, but each person who comes in contact with it along the way has to sign for it.
I've done the fully insured registered route that takes a week plus at times to arrive. I've also done the heavily packaged overnight route without all of the insurance as a signal to any nefarious postal workers. When its been the latter i made sure to package the box so securely that you could probably punt it without damaging the cards. I recommend going with whatever method you feel is safest for your cards.

If you use USPS.com you can insure the package without needing the insurance stickers.

Why won't PSA accept UPS deliveries?
what is the approx value of this card or total value of several cards you want to submit? $1k $10k? $25k? $50k+?

Regular brown box is fine, but all seams need to be covered with paper tape, not plastic. I use reinforced craft paper tape. This is so they can stamp the seams. Just don't be surprised if they look at you funny at the post office since registered mail is apparently fairly rare.
Batpig just described it fairly well. The box size depends on how many cards you plan on submitting. Here's video from PSA that shows their packing guidelines:
