Donruss and Donruss Optics_Ezekail Elliot and Dak Prescott

I have a collection of baseball cards that my kids (daughter age 9 and son age 6) have taken a huge interest in. They love going to the store and picking up packs to see what they get, just like I did when I was a kid, and actually still do (even at 45). The problem is they LOVE football cards, not baseball. I have no idea what is going on with all the available sets, parallel sets, etc. So I figured I would reach out to you guys.

They both love the Cowboys, Dak Prescott and Ezekial Elliot. And being from Houston, this is causing me great angst. Being that they are my kids, I guess I'll continue to have to deal with this.

As I search through Ebay, there are regular Donruss Rated Rookies and Donruss "Optics" Rated Rookies...they look the same other than the logo at the top. So what is the difference? They have asked me what the difference is and, quite frankly, I have no idea.
