Does anyone seek out those block varities where they changed mid span such as the 1934A KA $5 SCs or perhaps, for example the SC block 1935A $1 SC with these varieties:

As a block collector, I would collect from your example above:
SC blue seal (1st print)
SC Hawaii
SC R
SC S
And for the blocks with mules / LFP's, those too.
I've been trying to put together the $5 SC 1934-A KA blue/yellow set in CU. I also have the $1 SC 1935-A SC between the R and the S.

Yes! I especially like the middle run between the red R & S Experimentals.
Me too , but have found the run between Hawaii and Red R to be tougher in CU
