Chromebooks are simply running a stripped down version of Linux. You should be able to use any scanner that is "SANE" compatible, most of the popular and major brands from Canon, Epson and HP are usually OK. There is a list somewhere, if you Google "SANE scanning" you'll probably find what you need. Sorry, I am a lazy man or I'd do it for you ;-)
You will probably find more compatibility with standalone scanners (better for scanning slabs anyway) than "all-in-one" printer/scanner combos.
