Building sets with kids

Slightly off-topic, but my son turns one in five days (still feels like a day or so ago we brought him home). I've been looking for something to collect for a long time now and wanted to build a sports card set with him...but how do I know what sports (if any) he likes? I think the 1940 Superman Gum Set will be a fun one for the both of us to build together as he gets older (KINDA can't go wrong with Superman). So, for his birthday, one of his birthday presents, I picked him up a PSA 1 to get the set going. My goal with this set is FUN and LOW grade!

When my youngest daughter was still in diapers, I had a 5000 count box of commons out for some reason.
Well, I went somewhere(work? cant remember where) But when I got home, wife met me at the door
" Dont get too p*****, but an accident happened to your cards" Well she was wollering around them I
guess, and got her diaper off. "Chocolate" everywhere!! On a side note, its kind of a pain in the backside
to burn a 5000 count box of cards
Back to the present, my boys are 15 and love football cards. But I cant get either 1 of them interested in building
sets. They are only interested in stars and Chiefs players( go figure )

The joy of opening the cards and placing them in pages.
He just loves the cards and takes them to show everyone.
