How Do You Measure Centering on these?

There are some cards where it's unclear how to measure the centering.

Should the width of the bottom border be measured from the bottom of the baseball?

The 1979 All-Time Leader Cards are particularly confusing:

It seems here the centering measurement ignores the end of the pennant that sticks out on the left. I have five of these that have perfect back centering and yet all appear
off-center on the front if you don't measure the left border from the edge of the pennant. Thoughts?

On cards with three distinct borders, like the 1963's and 1973's I like the top and the side borders to be equal.

The ones I have the most trouble with would be like the 75's and 79's.

On cards with an open or different border like those you showed, PSA will typically use whatever is closest to the edge (like the yellow baseball in your example) to measure centering. But this is usually on cards that have large items like that yellow baseball. But PSA seems to ignore smaller objects that are close to the edge and uses the text instead. A good example of this is the 1975T highlight cards #1-7, where they will use the text at the top of the card and ignore the apostrophe, which they allow to be much closer to the edge than the other borders.

The best way to tell is to look at an uncut sheet. If you were to cut this partial sheet down the center, then that will show you how it should be measured.

Interesting. From the '79 sheet you show it looks to me like the left edges of the normal cards line up with the left edge of the pennant on the leader card. So in fact, a centered card should have the white stripe on the left side appear wider.
