What are considered "THE" sets?

What are the baseball and football sets that are considered the "greatest" or "most important" of their kind? I understand this is subjective, but what is the common thought process on this? The list that I've put together so far includes:

Football: 1935 Chicle / 1948 Leaf / 1952 Bowman (either) / 1957 Topps / 1969 Topps
Hockey: 1911 C55 / 1951 Parkhurst / 1954 Topps / 1971 Topps

The E107 would easily blow away the T206 set, value wise in same condition, even if the T206 set included the big 4..... Wagner, Plank, Magie, and Doyle
A couple collectors are known to be very close in completing the E107 set
The 1903 E107 set has the rookie cards of Honus Wagner, Christy Mathewson, Eddie Plank, Napoleon Lajoie, Rube Waddell, Addie Joss, Chief Bender, Elmer Flick, Frank Chance, Bobby Wallace, Fred Clarke, etc., etc.
commons book for over $10,000 ea. in NM if you can find them that nice
King of the smaller sets, the 1912 Boston Garter set of 16 cards, commons book for $30,000 ea. NM
