What is the best buffalo nickel reference for die varieties?

Is the David Lange book or Bowers' Whitman guide book better?

It depends on what kind of die varieties you are looking for. Other than the Lange book and the Whitman book, there are:

Treasure Hunting Buffalo Nickels (Wexler, Pope & Flynn) - - focuses on doubled dies, overmintmarks, and repunched mintmarks.

Buffalo Nickels - The Abraded Die Varieties (Ron Pope) - - focuses on 2-feather, no F, 3-leg and 3 1/2 leg varieties.

I have yet to get the Lange book but it is on my top 10 list along with some other phenomenal numismatic reference materials
