coin surface characteristics, a question

let's assume for a moment that many coins are to be minted from the same obverse-reverse die pair, with the same pressure throughout.

when will the dies produce proof-like surfaces?
when will the dies produce maximum metal-flow surfaces?

does it matter whether a coin is minted earlier or later or are the above features independent of when the coin is minted?

    First should be more proof like, late showing more luster as die surface takes on micro wear. Assuming to interval die polish or manipulation.
    Some debate if you should call it luster but with die wear that "proofy" surface begins to deteriorate and this continues.
