Since this is the popular thing to do now...
The choices seem pretty clear:
Mays, McCovey, Marichal, Cepeda. Those are the guys who's statues you'll see around AT&T Park.
I hear they're gonna do a statue of Gaylord Perry next... and put it at the bottom of McCovey Cove.

I know I went back to NY, but they are the Giants to me there as well darnit!!!!

I tend to focus on just the SF Giants, but if we wanted to go with the historic all-time NY-SF Giants, I'd go with:
Mathewson and Mays (all time greatest pitcher and hitter in Giants history)
Then Ott and Marichal.
2 pitchers, 2 hitters, one each from the SF and NY eras.
While Bonds piled up the HRs, Mays will always be the "greatest Giant."
If we need to have Bonds, he can be under the rock pile at the base.
