Has the Everyman sets broken price continuity

Typically prices escalate as grades escalate- However, as I watch auctions I see AU58's hammering for money equal to 63/64 money-

Also today- I watch a PCGS AU58 1921 Peace Dollar hammer for 375+juice. That is equal to what the 63's and 64's were hammering for.
As for the Peace the 1921 is often over priced for some reason. I think many are trying for the upgrades which can be a driving factor for many AU58 coins as some that I have got look as nice as the 63' and 64's I have owned.
From what you are saying I might not be seeing the trend as much as you. As I am in the race sometimes and not seeing the whole field.
The Everyman registry has dried up some supply but recently I've seen more and more AU Walkers on ebay. AU58's have been in demand long before Everyman because you could get more bang for your buck. Keep searching don't be in a hurry and the coins will come to you. I just picked up a AU58 1934-D and a 1920 for less than price guide and a 1935-d for EF money

They were not Walkers or dollars.
