I am looking to sell a high dollar coin but I am afraid of all the paypal scams. Is there a good way to sell on ebay without the chance of paypal scam?

Get the PayPal payment and immediately transfer it to your bank account or withdraw the money if you have a Debit card.

Also make sure your attached bank account has zero balance so if a chargeback occurs, they can't pull from that bank account to get the funds.
