What are these largely uncollected series we keep hearing about?

Besides super-minute die varieties, almost none of it is mainstream US.

Mostly foreign, tokens, etc.

Try finding a nice well made '82-P quarter from fresh dies.

The price guides say a nice choice specimen can be had for a few dollars but they aren't out there.

Try finding an unc '72-D type "b" reverse quarter in XF. No one cares about this enough to even
list a price and about the only place to find one is in circulation.
