why do all caballitos have a cleaned-ish look to them?
examples where you can't see wipe, they just have that "look" to them....
even the toned examples, under the toning just look... wrong .. compared to other silver coins.
is it just me?

If you asked me which coin is the biggest problem in term of having a cleaned look would be the British Trade Dollar

yeah, the Trade Dollar, but also the French 5 Franc (Hercules type) from the 1870s. Many of the UNC examples show heavy die polish in the fields, which when coupled with normal slide marks from contact with other coins, makes the fields look harshly wiped.

I like the design and would like to buy one. I have had a difficult time finding one that I agree with.
The strike looks a little mushy in places. Then matching the grade with what I see on the coin is another challenge.
Eventually, I will get comfortable with the coin enough to buy a nice one. It takes work to learn the series to be able to judge what a nice one is.
