Can someone offer advice on my Fantasy Football Playoff League?

First, let me state that no money is involved. This is just for bragging rights.
I need to pick a total of 8 players, 4 from the AFC and 4 from the NFC, but no more than two from any one team. I need a kicker and defense, which counts towards the 8 total team members.
Here is the roster I need.
1-QB
2-RB
2-WR
1-Swing: (RB or WR or TE)
1-Kicker
1-Defense
Scoring is typical fantasy scoring.
Anyone have any suggestions? Obviously, I would want to choose players on teams that are expected to go far into the playoffs, but that is harder to predict this year.
