I never heard that song and went and listened to the video and checked the lyrics, though "cooking catfish in a Gris-Gris bag" is a bit of a chore, a gris-gris bag is a small satchel worn around the neck, where, naturally, you keep your gris-gris. Chalk that up to "artistic license"

So what is actual gris-gris? It's whatever it needs to be, coins, stones, crystals, chicken bones....
