If only there was some type of container that could be used to surround the coins... perhaps something made of clear plastic... that could be sealed...
New collectors, please educate yourself before spending money on coins; there are people who believe that using numismatic knowledge to rip the naïve is what this hobby is all about.
Remind her that she's COVERED in germs (inside and out). She'll be so overwhelmed with the thought that her head will explode or she'll go on to live a normal life.
There was a reason why baby spoons and silverware was made out of silver, apparently it has anti-germ qualities. I'm sure someone can find a reference for this.
You can also get exposed to germs by touching anything, including yourself and by standing outside.

I'd say that if you're afraid to touch coins because of germs, not being able to be a coin collector is the LEAST of your problems.

buy her a nice selction of airtights and she can start a collection of coins found in the bottom of the washing machine... you can get a bag of popcorn and spend many a cheap night out at the laundry mat wondering what sort of treasures are to be uncovered when the cycle ends...... on those special nights you can seed the laundry with a couple dateless buffalo nickels or maybe some darkside stuff to expand her numismatic interests

Some gems can live quite a long time in harsh environments. Many can encapsulate themselves when outside their favorable environment and wait for moisture before becoming active. Bacillus Anthraces in powder form is such and it gets quit nasty and can live for many years in such a form. Yeasts and funguses can also survive harsh treatment. HIV will die within a reasonable time frame if left on the counter though and this is a good thing.
The article about MRSA found on coins....I would say at least half of the population is a carriers of this resistant staph. Every hospital worker should be considered a carrier. This is not just a hospital acquired infection any more though and can be found in normal populations.
Some metals have antibacterial qualities but the best solution with no damage to the coin is to put the coin under UV light. No damage to the coin but messes badly with DNA. Human DNA can be mutated also and cause cancer so be careful.

Update: I tried to get her to understand that coins are not unsafe and not diseased, but she is stubborn. She didn't have time to chat. First she's going tanning, then to have her nails painted.
