I don't see why not - it's a Mint product with valid denomination, etc.

I think they may shy away from it because of the mineral.

Does anyone know for sure if they grade this coin? Anyone seen one in a slab?

I don't see why not, unless the stone sticks too far up off the coin for the slab. Try contacting PCGS and ask (I've had mixed results trying to contact them about things like this though).
