Sets V. Individual Card Grading

I am looking for some advice about what to do with some of my sets.
I have a number of sets including 1979 Topps, 1975 Topps, and 4 (originally sealed) 1989 upper deck
I also have just about every complete set of Topps, Donruss, and Fleer from 82-91
As far as I can tell, it is better to pull the really valuable cards (I pulled my Ripken 82 traded, 84 fleer update Clemens/Puckett) and have them graded than to sell the complete set.
What is the general opinion on this, particularly the 89 upper deck? Is it worth trying for a Griffey 10 or selling the sealed sets?
Also, advice on the numerous other complete sets?

I've sold most of my collection which was similar to yours by grading the stars during specials and then selling the sets with the stars already graded. I chose to use fixed price sales with best offers considered.
