Over the years I've seen many different examples of Edward VII coronation medals.

Is there one that can be considered the official one?

Yes, Both Wollaston and British Historical Medals list the Coronation medal as the One with:

Obv. Crowned draped bust of Edward VII, right, above laural branch, EDWARD VII CROWNED 9 AUGUST 1902

Rev. Crowned draped bust of Queen Alexandra, right, above rose branch. ALEXANDRA QUEEN CONSORT. Date on label 9 AUGUST 1902

Large gold 1410 mintage... Large silver.. 21,188 small gold.. 9,850 small silver.. 323,500

Official medals would have been / were issued by other Bristish Commonwealth countries such as Canada, Australia, etc.
