There are lots of varieties in the mint sets. They pale in comparison to the number that never appeared in sets but they are numerous. These are much better checked than the circulation issues so relatively few es- cape detection in the sets.
My personal favorites are the '70-S sm dt cent, '70-S/S cent, '68 DDO dime, '70-D DDR dime, '69-D/D dime, '67 DDO quarter, '81 sm motto quarter, '65 RR 50c, '66 No Init 50c, '74-D DDO 50c, '88-P RR 50c.
There are lots of others as well.
Here is an idea if the incidence for most of these.
The only one I know of in the '68 set is the DDO dime. Look at the motto and LIBERTY-it has a moderate CCW spread and is a fairly nice Class V doubled die. Not too difficult to find either.

2005 has the DDR Minnesota Extra Tree D coin which brings a lot more than a non-extra tree coin of the same grade.

Of course neither the '69 nor '72 DDO's appear in the mint sets.
Few dies are used to make the sets so most of the varietie dies just weren't used to make them.
