That's right. Things change and you never know. The first week in December was always supposed to be one of the best weeks - I listed some auctions the first week in December 2005 and got killed on them - probably only about 70% of what I conservatively expected. With snipes, ending times don't even seem to matter anymore - sometimes I would see an auction ending late at night, stay up for it hoping for a bargain, and it didn't even matter as the late bids came in anyway...probably snipes. I still think though that Sunday night or Monday night are the two best times to end an auction unless it's a holiday or a big game is on such as the Super Bowl.
On theory, I think vintage will not matter when it is listed. I think the buyers are out there waiting for listing of vintage. I use Vintagecardprices for my want lists (this is the free service) and e-mails are sent automatically to my e-mail of any auctions.
As for the new stuff, the time of year may have some effect. e.g. trying to unload 2006 heritage as the 2007 heritage comes out may not be a good idea.

I think that auction duration is a much bigger factor in a winning listing, than is ending time. The snipe changed lots of things. Long auctions, obviously, allow for more eyeballs.
Also, I have noticed, over a long period of time, that when a new set is about to come out, the previous year's set can become hot. The guys who are going to buy the 2007 sets may want to make sure that the holes are filled in their 2006 sets.
Folks Who Bite Get Bitten. Folks Who Don't Bite Get Eaten.
By far the best sale I ever made on ebay was on five cent listing day the day before Christmas I think and the auction ended around Dec 31. It was a 1981 Donruss Golf card PSA 10 1 of 2 that went for about six times SMR. Fortunately, the right two buyers were battling for this card. Probably the worst time to sell, but it worked for me.
I have found its better to sell baseball cards during the baseball season and its betther to buy baseball cards during the off season. Same goes for Football cards as well.
I do not sell a ton but between my buying and selling my Ebay feedback is around 700 so a lot of transactions. I can honestly say I have never noticed any espeically good/bad time to buy/sell. Sports card generally have a range they sell for (especially graded cards) and I really don't think it matters when you sell them. I have ended auctions mid-day, mid-night, 7:00 pm Sunday, etc... and I have never noticed a particular good or bad time. I think it's more opinion than fact that there is some magical perfect time to list items. Good luck.
If it's baseball cards, I'd wait until at least the season starts before selling them; of course for me, who is mostly a buyer right now, this is a perfect time to get baseball cards during the off season when they tend to be a bit cheaper.

People might be shopping for things they didnt get at Christmas.
each and every day is a good time AND a bad time,
depending on LOTS of variables.
The shopper-base is so BIG that trying to predict
with certainty when one of them will buy inside of
a given category is just not possible.
You can make a case as to why ANY month might
be good/bad. January is as good as any other.
People who are always listing, are always selling.
