2006 Uncirculated Silver Eagles...might as well be Matte Proof?

Sorry if this seems dumb but I was comparing the details between the Proof and Uncirculated coin in my 20th ASE set and minus the proof specific finish the details look identical. They are just as sharp and clean as the proof and to be perfectly honest, after seeing proofs for years the regular uncirculated finish seems a little more attractive. You don't seem to lose any of the coin's beauty. Is the only thing that really separates the 2 coins (and maybe any modern proof vs uncirculated coin made specificly for collectors) the actual finish type now? I've always wished the mint would bring back old style matte proofs (maybe even with the sandblasted dies they used to do).
