The 5 mountains represent the 5 constituent states of the CAR: Costa Rica, Guatemala, Honduras, Nicaragua and El Salvador.
The Ceiba tree represents the CAR and the legend (somewhat optimistically) reports that it is "free, growing and fruitful".
BTW, the title of this thread is misleading. The CAR 8 Reales is not a "pillar dollar". The coin known by that name is the milled silver "Columnarios" 8 reales type issued by the Spanish colonial authorities 1732-1772, long before the emergence of the first Latin American republican issue (which was the 8 reales/soles type first struck by Argentine republican insurgents following their capture of the Mint at Potosi from Royalist forces in 1813).
The pillar dollar features the 2 crowned globes representing the Old and New Worlds united under the Spanish Crown, above the waves framed by the 2 columns (or pillars, which represent the Pillars of Hercules) and the words "Plus Ultra" ("More Beyond" i.e. there's a whole New World beyond the Pillars of Hercules and it is the property of the Spanish King).
You can see a picture of a genuine pillar dollar in the first few pages of the Red Book.
