On the second one--and this probably belies my ignorance--why the "Bey" in Johannes' name? That's an Ottoman/Turkish title and the Order was based around Latvia/Estonia, right?

You are right. Bey was a rank below Pasha within Arab states. But I think Bey is not a title here. It is a German word and may be a family name.

I just got the list of all bishops of Dorpat and Johannes VI Bey is the only one whose name contains Bey.
